Chicken Kelaguen
Chicken kelaguen is a local dish that is very popular in my hometown island of Guam. It makes a great side dish and is delicious when served on a toasted corn tortilla. This recipe uses a boneless chicken breast for ease of preparation. (Using a whole chicken that has been grilled over a wood fire provides the best flavor.)
1 Chicken Breast
2 or 3 Lemons
1 Small Onion
1/4 Cup Chopped Green Onions
1/2 tsp Salt
1 Cup Grated Coconut
2 tsp Chopped Hot Red Peppers
Love. Never forget to add love.
Cook chicken until center is 160°.
Chop chicken, onion, green onions, and red pepper into tiny pieces.
Grate coconut.
Mix chicken, onions, pepper and coconut in a bowl.
Squeeze juice from 2 or 3 lemons into bowl. (filter out seeds)
Add salt and mix thoroughly.
